Using wile or indigenous yeast. Allows our 2017 Syrah to show its full, delicious character. From its deep maroon color, to the warm and inviting aromas of dark berries and earthy Dutch licorice, all the way to flavors of boysenberries, dried mission figs, black currant and truffle, this wine is both fruity and savory, lush and fresh.
Tasting Profile
Harvested on August 28th with Brix sugar levels of 24.8. Cold soaked in tank for two days at 48°F and fermented for 7 days with temperatures from 70-88°F. There was no commercial yeast added and it was 100% natural spontaneous fermentation. Wild Yeast expresses Terroir - varietal character, aromas, flavors, mouthfeel, and a sense of place (Temecula). Free Run wine is used for all Reserve wines, no pressed wines are used.
