Harvested August 28th at 23. Brix. French yeast strain was used and fermentation started in tank prior to racking into French oak barrels. 100% Batonnage (lees stirring) during the fermentation stage in barrels. Fermentation was completed in barrels and Sur Lie aging for six months. Malolactic fermentation was 100% completed.
Composition: 100% Chardonnay Aging: 100% barrel fermented and barrel aged for 18 months in French oak. 30% new barrels. Alcohol 13.2%
